Be kind and rewind
It all started in New York, where Diana and Aurélien lived for about fifteen years. It was in the Clinton Hill neighborhood, among other places, that they discovered coffee shops and specialty coffee, frequenting places like Brooklyn Roasting Company, BKG Coffee Roasters, Peck's…
Upon their return to France, they opened a coffee shop named after the Brooklyn neighborhood where they lived. Located on Rue Pascal near Place de la Victoire in Clermont-Ferrand, it was a haven for all the city's coffee aficionados, expats, and friends!
The coffee shop was sold at the end of 2022, but like the phoenix rising from the ashes, Clinton Hill returned in 2023 in the form of a roastery.

Test and learn
In recent years in our coffee shop We had the opportunity to taste dozens of different coffees from roasters located all over France, ultimately selecting only a few. Each time, we adjusted various parameters such as the grind size and the extraction method. This allowed us to broaden our palate and establish solid benchmarks.
In our artisanal roastery, we adopted a similar approach, roasting beans from numerous origins and testing different temperatures and roasting times for each sample. This allowed us to achieve the current selection which offers you coffees that are both very different and complementary.
Our expertise
Shake and bake
We roast in small batches each week to guarantee maximum freshness. After each artisanal roast, the coffees are packaged by us in resealable bags. Our packages include all the important information specific to each coffee, such as origin, variety, process, tasting notes, and roast date.
Since its beginnings in roasting, Clinton Hill has been rewarded for the quality of its coffees: we won the Best Regional Espresso award in 2024, awarded by the Collectif Café, and finished in 3rd place in the Best Espresso of France competition at the Paris Coffee Show 2024, attesting to our commitment to excellence in the cup both regionally and nationally.
