Roaster Clinton Hill teamed up with distillery Cérès to select a specialty coffee with an assertive profile. Their choice was Pura Vida, an Arabica grown in Costa Rica by Olman Ureña Salazar on the Finca Toñita farm in the Los Santos region. Meticulously selected to bring out its full aromatic richness, this raw material gives rise to a complex, gourmet liqueur, where floral and fruity notes combine with powerful espresso accents.
To create this coffee liqueur, the Cérès distillery worked in two stages. First, it cold-macerated ground coffee in neutral alcohol, using a "light" roasting process to release the coffee's floral and fruity aromas. Then she made a coffee syrup, also cold-infused, this time from a darker, "espresso"-style roasting, orienting the aromatic profile towards intense, gourmet notes of cocoa, caramel and spices. After filtration, these two macerates are blended and bottled at 17%TAV.
It can be enjoyed purely as an ice cream or at the heart of a cocktail recipe!
